Harvest in 10 kg crates and manual selection. Destemming and gentle crushing. Pre-fermentative cold maceration with the skins. Alcoholic fermentation in stainless steel tanks at low temperature. Post-fermentative maceration.
Cabernet sauvignon 85% 15% grenache. Cabernet is a rough variety, hard and difficult to round, we have added 15% Grenache, to make an easier and more pleasant wine.
Malolactic fermentation in 50 hl French oak vats. Aged on its lees in 225-litre French oak barrels for 8 months.
Cherry red red wine. Aroma of ripe red fruit, plum with spicy notes and balsamic touches. On the palate, it is reminiscent of black cherries with a subtle spicy background of pepper and liquorice, with balanced tannins.
Red meat and game, stews, sweet rice and cheese.
