Harvest in 10 kg crates and manual selection. Destemming and gentle crushing. Pre-fermentative cold maceration with the skins. Alcoholic fermentation in stainless steel tanks at low temperature. Post-fermentative maceration.
It comes from vines that were planted about 60 years ago with 3 varieties, completely mixed, Bobal, Bonicaire and Monastrel, this wine is called BBM. It is something unique that is achieved with this mixture.
Malolactic fermentation in 50 hl French oak vats. Aged on its lees in 225-litre French oak barrels for 8 months.
Cherry red red wine. Aroma of ripe red fruit, strawberry combined with toasted aromas of French wood. Fruity, acidic and fresh on the palate with well-integrated and rounded tannins due to the wood.
Roasts, red meat, stews, sweet rice and cheese.
